1. One Chemical Group Makes the Difference
All three come from natural cellulose — cotton or wood pulp. The difference is the chemical group on the chain.
HPMC: methyl + hydroxypropyl groups
MHEC (HEMC): methyl + hydroxyethyl groups
HEC: only hydroxyethyl groups, no methyl
One small change. But it changes everything in your mortar.

2. Gel Temperature — the Biggest Difference
HPMC and MHEC both have a gel temperature. Heat them past it, and they gel. They stop holding water.
HPMC: 55–70°C
MHEC: 70–75°C (higher, because hydroxyethyl loves water more than hydroxypropyl)
HEC: no gel point — it does not gel when heated
So in hot weather, MHEC holds up better than HPMC. That is the main reason to pay extra for MHEC.
3. Water Retention — HEC's Weak Point
HPMC and MHEC both hold water well. They keep water in the mortar, so the cement has time to hydrate. This is why they are the main choice for cement mortar.
HEC holds water poorly. It also thickens weakly in cement. So HEC is almost never the main additive in cement mortar. HEC is for paint, stone paint, detergent, and oil drilling — jobs that need flow and suspension, not water retention.
4. How to Choose
Cement-based mortar (tile adhesive, putty, render, masonry) → HPMC or MHEC
Not hot → HPMC
Hot + fast-set job (tile adhesive, masonry) → low-methoxy HPMC (heat-resistant, but short open time)
Hot + long open time needed (putty, render) → MHEC
Paint, stone paint, detergent, oil drilling → HEC (or MHEC)
Easy rule: cement mortar uses HPMC/MHEC. Paint uses HEC.

6. A Common Mistake
Some people say "MHEC resists alkali better, so it fits gypsum." This is wrong.
HPMC and MHEC are both non-ionic. Their alkali resistance is about the same. Neither is clearly stronger. And gypsum is neutral (pH 6–8) — it does not need alkali resistance at all.
The real reason to use MHEC in gypsum is heat resistance. Its gel temperature is higher. Gypsum products often face heat — drying, summer work, hot curing. So MHEC fits. Not because of alkali.
